Quinoa Salad

  • 1 cup of quinoa
  • 2 cups of water
  • 1/2 cup of corn
  • 1/2 cup of chopped cucumber
  • 1/2 cup of chopped grape tomatoes
  • Handful of sprouts
  • 1 lemon


  1. Add 1 cup of quinoa with 2 cups of water to a small pot. Turn the heat to high until you have reached a boil. Then turn down to low and cover for 15 minutes
  2. Remove quinoa from pot and place into a bowl
  3. Add in the corn, cucumbers, and grape tomatoes
  4. Mix into the quinoa and top with sprouts
  5. Squeeze 1 lemon onto the top of the quinoa salad
